The person I'll describe is my uncle Minh, who is by some distance the best cook in our extended family, despite never having had a single lesson in his life. He mostly cooks traditional Vietnamese food — proper broths that take the better part of a day, various things wrapped in banana leaf, the kind of dishes that require you to just know when something's ready rather than following a timer. He's entirely self-taught, which is what makes it more impressive to me; he learned by watching his own mother cook as a child and then, decades later, basically reconstructed her recipes from memory after she passed away, adjusting them through trial and error until they tasted right. There was no recipe book involved, not really — just his memory of a smell or a texture from thirty years earlier that he'd chase until he landed on it. What I like about his food isn't really about technique in any showy sense; it's that everything he makes tastes unmistakably like somewhere specific, like a particular kitchen at a particular point in his life, rather than a generic version of the dish you could get at any restaurant. Eating at his table feels less like a meal out and more like being handed a small piece of family history, which sounds a bit sentimental, but honestly that's exactly what it feels like when you're actually sitting there with a bowl in front of you.
