The skill I'll describe is cooking — specifically, cooking without a recipe. I learned it out of necessity when I moved out at nineteen. At first I followed recipes exactly, weighing everything, and the food was fine but I couldn't adjust anything. If I was missing one ingredient the whole plan collapsed. How I learned it was mostly by cooking the same five dishes over and over, maybe forty or fifty times each, and paying attention to one variable at a time. One week I'd only change the amount of salt. The next week only the heat. It sounds obsessive, and it was, but it's the only way I found to understand what each thing actually does. It took roughly a year before I could open the fridge, see what was there, and decide. Not a year of classes — a year of ordinary dinners. Why was it worth learning? The obvious answer is money, and it's true, I spend much less than my friends do. But the real value is different. Cooking is the one thing I do where the feedback comes immediately. You taste it, you know. Most things in life, especially work, you don't find out whether you were right for months. And there's something else — well, I mean, being able to feed people properly changes the kind of host you can be.
